Taco casserole Recipe

I take this to a lot of pot-lucks. It is always one of the first things gone! The kids love this!

Taco Casserole ingredients

  • 10 taco shells, broken
  • 1 1/2 lbs ground beef
  • 1 (1 1/4 ounce) package taco seasoning mix
  • 1/2 cup water
  • 2 tablespoons minced onions
  • 8 ounces tomato sauce
  • 2 cups grated monterey jack cheese
  • 1 large tomato, cut in wedges
  • 8 stuffed green olives, sliced

Taco Casserole Recipe

  1. Put 1/2 the broken shells in 2 qt greased casserole.
  2. In skillet, brown beef, drain.
  3. Add taco seasoning, water, and onion.
  4. Simmer for 8 minutes.
  5. Stir in tomato sauce.
  6. Spoon into casserole; sprinkle with 1-1/2 cups cheese.
  7. Add remaining broken shells; sprinkle with remaining cheese.
  8. Arrange the tomatoes and olives over the cheese.
  9. Bake at 350*F for 20 minutes, until hot and bubbly.

    this was great because it was so easy and tasted so good. i did add a little fresh cilantro to the meat and used rotel instead of chopped tomatoes and it turned out really good. next time i think i might add some refried beans. definitely a keeper. thanks for the recipe!!

    I thought this was great!! And so simple to put together…..this might replace regular tacos at my house! I served it with shredded lettuce and taco sauce to put over the top!

    MizzNezz This was awesome, I added a few things, a layer of refried beans, a layer of queso,(from a jar) a layer of black beans, I substituted black olives, love those wth anything mexican! I also served this with sour cream, and salsa, sliced green onions, and a little sharp cheddar, My 4 kids LOVED it, not a bit left in the pan, Another winner!!

    This was good,more like nachos to me than a supper but still very tasty.I used tortilla chips in mine,I wouldn’t use them as the bottom layer again,they were too soggy.I would start with the meat layer.I used salsa instead of tomato sauce and omitted the olives.

    This was really quick and easy to make. I substituted medium salsa instead of tomatoes on top, and it gave it a nice kick. I think next time I will try adding some beans to the recipe as well.

    This recipe was great. I used tortilla chips instead of taco shells. I didn’t use the tomato and I used chopped olives in place of green olives. Nevertheless it still turned out great. Thanks for sharing.

    This was very good! My whole family enjoyed it. Next time I will have to make more because there wasn’t enough. I used ground turkey and added garlic to it. This is a definate keeper. Nice change of pace from everyday tacos.

    This was great! I made for the kids, planning to make something else for DH and myself to eat. Well, I tasted it as it came out of the oven and it was fantastic!! I added some refried beans to the ground beef but other than that followed the recipe to the letter. My picky 2 year old ate the leftovers for lunch the next day–That has never happened before. Thank you for sharing this terrific recipe!

    I made this for a pot-luck at my church. It was simple and quick to make. I substituted black olives for the green olives. There was nothing left and I even recieved compliments. The warm and juicy tomatoes baked on top of the casserole was my favorite part. I’m going to serve this to my family with shredded lettuce and salsa to add after baking. Thank you for the easy to follow instructions.

    This was not only a kid pleaser, but also a hubby pleaser. I did use Colby-Jack cheese instead and served it with sour cream. Yum! Will try ripe olives and salsa next time. Thanks for posting!

    This was a winner with DH and my 2-year-old. I added a can of black beans and a can of corn. I omitted the tomato and olives on the top, since DH doesn’t like tomatoes and I don’t like olives. Also I didn’t have any jack cheese, so I used mozzarella. Very delicious! I think that tortilla chips would have tasted fine, but the actual taco shells gave a better texture and flavor.

    I made this for our monday night “taco night” and at first i had to hear from the kids that they were going to hate it and they were prepared to eat something else. i made them try it and they LOVED it. It really was very good. i added some salsa and green chiles and used turkey meat. but it was good!!!

    Child-friendly way to eat tacos with a spoon! I used nacho chips instead of the shells, and 5-6 T of very minced onions to hide them from the kids. Next time I think I will not drain and then just omit re-adding the half cup water. I used cheddar and black olives. I prefered to put the top layer of chips on top of the meat so they would soften better, instead of on the cheese. Also, I felt the need for more of a healthy juicy something, so I think I will add a lot more tomatoes next time. Very easy to make.

    Oh, my gosh…this dish was so easy and delicious. I followed the recipe exactly, with the exception of grated cheddar cheese in place of the jack, and sliced black olives in place of the green ones. DH raved and raved and asked me to be sure I made this dish again…and soon! It’s a winner through and through.

    I made this last night and it was a huge hit with DH and 3 kids! I used Taco Seasoning instead of the packaged taco seasoning and the flavor was fabulous. I also left off the tomatoes and olives (picky eaters wouldn’t have cared for them). I used 1lb ground beef and one 15 oz can kidney beans. I substituted tortilla chips for the shells, as I was afraid the shells wouldn’t be crisp enough. Thanks for posting!

    Not sure why I didn’t think of making something like this before! It was great. I was looking for a recipe to use up some ground turkey and this was a great way. The main changes I made were that I used salsa instead of tomato sauce, I added a chopped onion to the turkey, and I added a layer of brown rice to bulk it up some. Next time I think I’ll add some black beans as well. My picky husband said I could make this one again, so that’s saying something!

    This was very good and the kids loved it. I used ground turkey instead of beef and chunky salsa instead of the tomato sauce just to sneak in a few extra veggies. I also substituted sliced black olives for the green, just a personal preference. I personally didn’t care for the taco shells because they were a little on the chewy side but no one else complained. I thought the tomato wedges on top added a nice flavor and they looked pretty with the olives. I served with a little sour cream on top. This will go on the list of easy weeknight meals and will certainly be made again.

    I’ve made this three times and can’t believe I forgot to rate it! The kids can’t get enough of this (nor can we adults!!) I did make some changes, I added a can of refried beans to the hamburger, a few handfuls of diced tomatoes with jalapenos with the juice squeezed out, 1 can of black beans- rinsed and drained, 1 tsp of garlic, 1 can of corn- rinsed and drained and cumin to taste. I used 3 green onions chopped, and either a jar of salsa or mild enchilada sauce instead of the tomato sauce. I also used Hot and spicey taco seasoning mix as we like things spicey. As the kids say…this is a BOMB recipe and I recommend it to anyone looking for something filling and different. Thanks for posting this great recipe.

    I made this last week and was glad that my husband liked it since I took one bite and didn’t care for it. I used tortilla chips instead of the taco shells, but found it to be very dry and flavorless.

    This was just ok for me. The taste was good but I felt like it was missing something. I did add rotel tomatoes & black olives but I think if I made it again I might also add diced peppers or jalepenos and substitute hot sauce for the tomato sauce. Just needed a bit more zip and a bit more substance.

    This was a great way to use up broken taco shells. I added leftover white rice and 1/2 jar of salsa to the beef mixture. Served with black olives, sour cream and salsa on the side. It was yummy. Even my picky DD who refuses to eat the meat on nachos and tacos ate a fair helping and didn’t complain!!

Taco Casserole ingredients

  • 1 lb ground beef
  • 2 packages lowrey's taco seasoning
  • 3/4 cup water
  • 1 can diced tomato
  • 1 can chopped black olives (optional)
  • 1 small onion, chopped
  • 1 (8 ounce) package shredded cheddar cheese, reserve half
  • 1/2 package taco chips, broken apart,medium size

Taco Casserole Recipe

  1. Brown the ground beef.
  2. Add the searsoning packages with 3/4 cup water.
  3. Simmer for 15 minutes.
  4. Add the can of tomatoes, undrained.
  5. Add the onion, olives, cheddar and broken chips.
  6. Mix all.
  7. Place in 1 1/2 quart lightly greased casserole dish.
  8. Place in the oven@ 350 degrees for 30 minutes.
  9. Pour remaining cheese over top.
  10. Bake another 10 minutes or until cheese is melted.
  11. Serve alone or with a salad if desired.

  • 1 lb hamburger
  • 1 package taco seasoning
  • 1 can tomato sauce
  • 1 can Mexican-style stewed tomatoes with jalapeno peppers (optional)
  • 1 can mexican style beans
  • 1 bag tortilla chips (I use doritos or tostitos)
  • 2 bags of shedded mexican style mixed cheeses (depending on how cheesy your family likes it you may need more)

taco casserole Recipe

  1. In skillet brown hamburger.
  2. After brown add seaoning.
  3. Then add tomatoes, tomato sauce, and a handful of cheese.
  4. Wait until cheese is melted and then add beans and some crumbled chips (about 1/4 of them).
  5. Let simmer for about 10-15 min.
  6. Preheat oven to 375.
  7. When chips are soggy add entire mixture to casserole dish and top with layer of chips and cheese.
  8. Bake until cheese is melted and chips are crisp.
  9. About 20 min.

Taco casserole Recipe

This is a real make fast dinner. It's easy and the kids like to top it with their favorite toppings. I have used the nacho cheese Doritos with this and it was great! Enjoy!

Taco Casserole ingredients

  • 1 lb ground beef
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1 (1 1/4 ounce) package taco seasoning (I use the mild)
  • 1/2 cup water
  • 1 cup crushed tortilla chips (you can also use Doritos any flavor)
  • 1 (16 ounce) can refried beans
  • 1 cup cheddar cheese

Taco Casserole Recipe

  1. Brown ground beef onion and peppers, drain off fat, stir in taco seasoning mix and water.
  2. Put the crushed chips on the bottom of a greased 8 inch pan; put refried beans in a bowl and stir until softened/smooth so you can spread them over the chips.
  3. Spread beef mix over beans, top with cheese and bake uncovered at 350-375°F depending on your oven, for 20 minutes or until heated through.
  4. Top with lettuce, tomatoes, sour cream, salsa, guacamole, whatever you like.

    I gave this 5 stars. My family loves this stuff! I make mine slightly different. The copy of the recipe I have came from Pinchin Your Pennies from a fellow couponer. She did not call for water, green pepper or onions in the recipe. In my copy The tortilla chips is 1/2 bag. I use the gold kind as they are thicker then regular tortillas, cheese is 2 cups Monterey Jack. Also the recipe calls for 1 small can tomatoes with chiles. She uses Rotel, 1 sm can black olives, diced, 1 med tomato, diced. I used the canned to save on time and chopping. As directed in your recipe you mix the taco seasoning with the beef and add the canned tomatoes with chiles and simmer 10 minutes. I simmer 5 minutes. Then layer as directed. The order of ingredients is slightly different it calls for the chips, browned beef mixture, beans, cheese, olives and diced tomatoes. Thanks for posting such a yummy recipe! Christine (internetnut)

So I sprinkled it on top, sprinkled some garlic powder and added cheddar cheese at the last 5 minutes. This is also pretty friendly for our diet right now. Thanks so much for a great change!

  • 1 lb lean ground beef
  • 1 (8 ounce) can tomato sauce
  • 1 small onion, chopped
  • 1 (1 1/4 ounce) envelope taco seasoning mix
  • 1/2 teaspoon garlic powder
  • 1 (8 ounce) container sour cream
  • 1 cup cottage cheese
  • 2 cups crushed tortilla chips
  • 2 cups shredded monterey jack cheese

Taco Casserole Recipe

  1. Preheat oven to 350 degrees.
  2. Coat a 2 1/2-quart casserole with nonstick cooking spray.
  3. In a large skillet, brown ground beef over medium-high heat.
  4. Remove from heat and drain if necessary.
  5. Stir in tomato sauce, onion, taco seasoning mix, and garlic powder; set aside.
  6. In a medium bowl, combine sour cream and cottage cheese; set aside.
  7. Place half of the tortilla chips in the casserole dish and top with half of the ground beef mixture, then half of the sour cream mixture.
  8. Sprinkle with half of the Monterey Jack cheese.
  9. Repeat layers.
  10. Bake, uncovered, 30 to 35 minutes, or until cheese melts and casserole is heated through.

    I cooked the onion and meat together at the same time, and the onions got good and sweet. It was so easy to make and my husband went back for seconds, then thirds!! Next time, I’ll probably use reduced salt chips, as it was a bit salty for my taste.

    Doubled and modified to fit the budget. =)I used 8 oz of sour cream and regular shredded cheddar it came out perfectly. One daughter did add salsa to the top. =)

    I’ve made this casserole 3 times, and it’s always a hit with my family! It’s a great way to use up those bottom of the bag chip crumbs. The only thing I do differently is simmer the beef, tomato sauce, and taco seasoning together for about 15 minutes. Great recipe!
