Spicy with a hot pepper jelly glaze!!

SERVES6-8
Southwestern Meatloaf ingredients
- 1 lb lean ground beef
- 1 lb ground pork
- 3/4 cup pitted black olives, coarsely chopped
- 1/2 cup yellow cornmeal
- 2 large eggs, lightly beaten
- 1 medium onion, chopped
- 1/4 cup pickled sliced jalapeno, chopped
- 2 cloves garlic, chopped
- 1 teaspoon best quality chili powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/4 cup hot pepper jelly, medium or hot
Southwestern Meatloaf Recipe
- Preheat oven to 350 degrees F.
- Combine all ingredients except for jelly in large bowl (hands work best for mixing) and mix well.
- Pack mixture into greased 9x5x3 inch loaf pan and spread a couple tablespoons hot pepper jelly on the top.
- Bake for 1 1/4 hours or just until cooked through.
- Brush on the remaining jelly while it's baking to glaze the meatloaf.

Southwestern Meatloaf ingredients
- 2 lbs ground chuck or ground turkey
- 1 (1 1/4 ounce) envelope dry onion soup mix
- 2 cups corn flake crumbs or uncooked oatmeal
- 2 cups thawed frozen corn kernels, thawed or canned corn, drained
- 1 (4 ounce) can chopped green chilies, drained
- 3 eggs
- 1/2 cup water
- 1/3 cup salsa or chili sauce or ketchup
Southwestern Meatloaf Recipe
- Preheat oven to 350°F.
- Mix all ingredients together well in a large bowl.
- Spray a 13x9 pan with cooking spray and shape meat mixture into a loaf.
- Bake for one hour and 15 minutes.
- Take out of oven and let it sit for 10 minutes.
- Can serve with salsa.
