Pecan-Crusted Chicken with Banana Salsa
Don't turn your nose up at the Banana Salsa (we did at 1st) it is absolutly great with the pecan chicken, or by itself. We also put chunks of pineapple in the salsa to add a little different flair (bananas and pineapple do so well together) and its so yummie.

Grilled Chicken Wings The marinade is simply wonderful and so easy. If you bite into one of these hot off the grill the rest may not make it into the house! Make extras because the kids will eat them cold the next day. I marinated the wings for 6 hours to overnight. I also use 1 tablespoon of fresh ginger finely grated instead of ground ginger. by Charlotte J

Curried Chicken Salad with Fruit and Pecans
Elegant and rich with a creamy, buttery texture, this is the best chicken salad I've ever eaten! The original recipe was served at Yankee Peddler's Tea Room in Missouri and I've adjusted to taste. This is an excellent chicken salad for croissants, or serve on a bed of greens with melon and fruit on the side for a wonderful summer meal.

A sort of dijon chicken casserole -- I want to make it all the time, it's so good. I originally just marinated chicken this way and put the bread crumbs on top, but this is so much better -- the bread crumbs bake into a stuffing consitency and its just delicious.

While I'm not claiming it tastes just like the KFC recipe, this is truly an AWESOME recipe for fried chicken!! My mom has been making this since I was a wee little one, and I still absolutely LOVE it! My whole family really enjoys this chicken. The ingredients are a little different, but don't let that scare you. Make it once, and you'll be hooked! Prep. time includes refrigeration time.
