My daughter really likes these, even if you're not diabetic they are great. Cook time is freezing time.

Arancini Sicilian Style (Sicilian Rice Balls)
My grandmother (on Dad's side) used to make these for supper on Saturday nights. Occasionally I still make them for dinner but I usually serve them as an appetizer at parties or get togethers.

Never Fail BBQ Chicken Breasts
This an easy tasty way of BBQing chicken. I know "canned soup?". Well go ahead and make your own sauce from scratch but in the heat I'll use canned every time!

Chive Baked Salmon
I adore fresh salmon. The cream cheese topping, keeps the salmon moist. As it melts, the flavors of the herbs and vegetables encases the fish steaks.

Garlic shrimp (gambas al ajillo)
This is a wonderful Spanish appetizer (tapa), and is so easy to make! It is delicious served with crusty french bread and red wine. It may be made up to a day in advance, and then cooked right before serving.

Broiled pineapple

Broiled Pineapple
I made this up when I had half a pineapple left which was just calling my name. I love pineapple and can easily eat a whole one in one day. After lots of chunks grabbed throughout the evening, I decided to try something a little different. This recipe is so easy and quick and really great when you want something light, but a little more than just another piece of fruit for dessert.

Gravlax (marinated salmon)
Posted on July 12th, 2010
Gravlax (marinated salmon) This is the traditional Swedish gravlax recipe. Nowadays lots of varieties have evolved, but this is the original. It is traditionally served with the mustard sauce ('Gravlaxsas') and lemon. I recommend a German or Californian dry or semi-dry white wine to this. Because of the simplicity of the recipe, the salmon has to be of the best quality and freshness available. by André Grisell

Yummy crunchy caramel apple pie
Posted on July 12th, 2010
Yummy Crunchy Caramel Apple Pie My Grandmother gave me this recipe after she made it for me during a visit about 5 years ago. I like to use Granny Smith apples, leave the peel on, and cut slices that are a little thick, but do whatever you wish! This is a very good pie and I'm always asked to make it! Thanks, Grandma!! Dilly Sole
My DH developed an allergy to white fish many years ago, but this was a dish we both loved; I served it often in the early 80s. It doubles easily if you want to feed more people.
